Spring is the most welcome season in Oregon. Blossoms and blooms begin to appear, the temperature climbs steadily and an amazing array of green hues fill the landscape. Spring also brings some of our favorite foods. Wintered over raabs begin the story of transition, nettles are the first sign that foragers baskets will soon be brimming with the bounty of the forests. Spring run Chinook salmon, pastured lamb, rabbit, asparagus, morels, radishes and carrots are common ingredients. Herbaceous broths and purees are plentiful and the simplicity and sweet crunch of pea tendrils let us know tender peas and Summer’s bounty are right around the corner.
