Our Summer’s in Oregon are an explosion of color and flavor. Though the Spring rains may take longer to subside, the length of the days ensure the bounty of Summer’s harvest. The alluvial soil of the Willamette Valley produces some of the most flavorful nutrient dense produce on the planet. That produce is the foundation of our Summer menu, offering an array of raw, roasted and marinated dishes as the base for our proteins. Pastured beef, from Wallowa County, pastured hen, Alaskan halibut and Oregon Coast Albacore tuna are highlights each and every week from June through August. Stone fruits and berries are one of the most magical elements of the table in the Northwest and we celebrate them in sweet and savory combinations. Other Summer favorites include melons, foraged mushrooms, shell beans, frikeh, heirloom tomatoes, tender green beans and crisp head lettuces.
