The colors of Autumn tell us that Winter approaches but not before our favorite foods appear at our doorsteps from our farmers totes. Autumn produce is about sweetness and developed sugars from Summer’s heat. The bounty of Summer lingers and mingles on the plates while new Autumn crops of alliums, Winter squash and roots vegetables become our mainstays. Our Autumn palate rounds out with foraged mushrooms, sturgeon, oysters, and duck. Fruits of the season offer a vast array of pears and apples, while rosehips and ground cherries also find their way onto the menus.
